What You’ll Need

Ingredients

Mexican Rice:
  • 2 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 1 ½ cups long-grain white rice
  • 1 tbsp Tone’s® Mexican Rice Seasoning
  • 1 (8 oz) can tomato sauce
  • 2 ½ cups chicken or vegetable broth
  • 1 small tomato, diced
  • Chopped cilantro, for garnish

How to Make it?

Heat olive oil in a large skillet or saucepan over medium heat. Add diced onion and cook 2 minutes; add garlic and cook for another minute until fragrant. Add rice and cook, stirring frequently for 2-3 minutes until lightly golden.

Stir in Tone’s® Mexican Rice Seasoning, tomato sauce, and broth. Bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed. Remove from heat, let sit for 5 minutes, then fluff with a fork. Stir in diced tomato and top with chopped cilantro.
